It's winter and we're having our first real snowstorm of the season--Jonas, I believe it's called. Last year, in the midst of the unrelenting snow and cold we decided to have a dinner party. And though so far this year Fortuna has spared us, we thought it was time for another wintery dinner party. Since snow is our theme, I decided that my grandmother's old fashioned coconut cake would be thematically appropriate--yellow Genoise with coconut custard filling and snowy white 7 minute icing.
I haven't made this in years--everyone loved it and it reminded me of her and the hundreds of coconut cakes she made for us in her kitchen in Eunice, Louisiana over the years.

ReplyDeletejust looking at the coconut fuzz sprouting from the caked dome reminds me of Ma and holidays in Eunice. I can even smell the 5 gallon bucket of sugar in the white icing.
